Weber Q Prawn Sliders

Ingredients

500g large raw, peeled prawns, deveined

1 tbs olive oil

2 garlic cloves, crushed

¼ tsp chilli flakes

¼ tsp lemon pepper

Finely grated zest of 1 large lemon

1/3 cup (100g) aioli

2 tbs finely chopped chives or flat-leaf parsley

6 brioche slider buns, split

1 small firm ripe avocado, thinly sliced

6 grape tomatoes, halved

Lettuce leaves, to serve

Instructions

These little sliders make the perfect party starter, a simple entree or a great light lunch. Marinate the prawns in advance then all they need is a quick grill. The new Weber Q with its high efficiency burner design provides even, consistent heat across the entire cooking surface, which means the delicate prawns will cook evenly.

1. Combine the prawns, oil, garlic, chilli flakes, lemon pepper and half the lemon zest in a bowl. Season. 

2. Combine the aioli, chives or parsley and remaining lemon zest in a small bowl. 

3. Prepare the new Weber Q for direct cooking over high heat (230°C to 260°C).

4. Thread the prawns onto skewers. 

5. Grill the prawns over direct high heat, with the lid closed, for 1-2 minutes on each side, or until they are firm to the touch and just turning opaque in the centre. 

6. Place the brioche buns on the new Weber Q grill, cut-side down and cook for 30 seconds or until lightly toasted. 

7. Spread buns with aioli mixture and top with lettuce, prawns, avocado and tomatoes.

Recipe Tips:

If using wooden skewers, be sure to soak them in water beforehand, to prevent splitting and scorching during cooking. 

Replace the aioli with mayonnaise, tartare sauce or your favourite creamy dip for a change. 

If time allows, refrigerate the prawn mixture at the end of step 1, covered, for 1 hour to marinate.

Exact cooking time of prawns will depend on their size and thickness. Keep an eye on them throughout.
