Beer Can Chicken - Serves: 4

What’s better than a weekend away with some beers and time to kill? Nothing, that’s what. So why not get the reliable Weber Traveler Portable Gas BBQ out and cook the most moist and flavourful chicken a camper could want? Just take a beer can out of the Tradie Two 52L DC/AC Portable Fridge, make it half full and put it up the chicken’s, ehhmmm, cavity.

Ingredients:

  • 1 whole chicken
  • 1 can of beer
  • 2 tbsp olive oil
  • 2 tbsp paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp salt
  • 1 tsp black pepper

How to cook:

  1. Preheat your Weber to medium heat, around 190°C.
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, salt, and black pepper; then rub the seasoning mixture all over the chicken, getting it under the skin and in the cavity.
  4. Crack your beer can and pour out about half of the beer (possibly into your mouth). Place the can on a flat surface and slide the upright chicken onto the can with the legs pointing down to form a tripod, with the can inserted into the cavity of the chicken.
  5. Place the chicken on the BBQ grill, using the legs to support it and keep it upright. Close the lid and cook for about 1.5-2 hours, or until the internal temperature of the thickest part of the chicken reaches 75°C.
  6. Using tongs, carefully remove the chicken from the grill and place it onto a cutting board. Let it rest for about 10 minutes before removing the can and carving the chicken.

 

Grilled Mini Pizza - Serves: 4

Pizza, a staple in any household. And now, a staple in the campsite, too. So fire up the Weber Baby Q1000 and get ready for the best pizza south of Naples. If you do, you’re sure to be the king of the campsite. Note: our recipe requires you to make your own dough, but we won’t judge if you get store-bought and jump to step 5.

Ingredients:

  • 1/2kg of pizza dough (homemade or store-bought)
  • 1 cup of pizza sauce
  • 2 cups of shredded mozzarella cheese
  • Toppings of your choice
  • 2 tablespoons of olive oil

How to cook:

  1. Preheat your BBQ grill to medium-high heat.
  2. On a floured surface, roll out the pizza dough to your desired size and thickness.
  3. Brush one side of the dough with olive oil, then place the oiled side down onto the grill
    grates. Brush the top side with olive oil.
  4. Close the lid and cook for 2-3 minutes or until the dough is lightly charred and the bottom
    is crispy. Once done, grab your tongs and flip the base over.
  5. Immediately add your sauce, cheese, and toppings to the cooked side.
  6. Close the lid and cook for another 2-3 minutes or until the cheese is melted and bubbly.
  7. Remove the pizza from the grill using tongs or a spatula, and place it onto a cutting
    board. Let it cool, then serve.

Pancake Breakfast Burrito - Serves: 3

Here, we’ve got all the best parts of breakfast all wrapped up in one delicious pancake. What’s not to love? Simply grab the brekky ingredients out of your Tradie Two 52L DC/AC Portable Fridge and fire up your Weber, enjoy a breakfast burrito like no other.

Ingredients:

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg (for pancake)
  • 3 eggs (1 per person)
  • 3 breakfast sausage
  • 3 rashers of bacon
  • 1 tomato, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onion
  • 3 mushrooms, sliced
  • Salt and pepper, to taste
  • Maple syrup or hot sauce (optional)

How to cook:

  1. Preheat your Weber to medium heat.
  2. In a mixing bowl, whisk together the pancake mix, milk, and 1 egg until smooth.
  3. Pour 1/4 cup of the pancake batter onto a greased griddle or cast iron pan on the BBQ
    and cook until bubbles form on the surface of the pancake. Flip the pancake and cook
    for an additional 30 seconds. Repeat with remaining pancake batter.
  4. On each pancake, place your cooked sausage and bacon, fried egg, fried mushrooms,
    shredded cheddar cheese, and chopped tomato and onion. Season with salt and pepper
    to taste.
  5. Fold the sides of the pancake over the filling, then roll the pancake up into a burrito
    shape.
  6. Place the pancake breakfast burritos on the BBQ and grill until the cheese is melted and
    the burritos are heated through.
  7. Serve the pancake breakfast burritos with a drizzle of maple syrup or hot sauce, if
    desired.
